This recipe is dedicated to being clever and creative in life. Sometimes a little innovation makes a delicious and convenient meal. Imagine a great enchilada sauce paired with our savory Taquitos and the transformation is nearly complete … terrifically tasty Chicken Style enchiladas!
Ingredients:
- 8 StarLite Cuisine Taquitos (1 package)
Sauce
- ½ cup tomatillo, chopped
- 1 large garlic clove, chopped
- ½ onion, chopped
- 2 cups water
- ½ fresh cilantro, chopped
- 1 small jalapeno chili (optional)
- salt to taste
- 3 tablespoons vegetable oil
- vegan cheese
Directions:
- Preheat the oven to 350 degrees F.
- In a blender or food processor, mix sauce ingredients to a course puree. Heat oil in a saucepan. Add sauce puree, stir, bring to a boil. Line baking dish with Taquitos.
- Pour hot sauce over Taquitos and top with vegan cheese.
- Bake for 15 minutes or bubbly and hot

Ingredients:
- 1 green cucumber peeled, seeded, chopped
- ½ medium onion, chopped
- 3 tablespoons fresh lime juice
- 1 large garlic clove, chopped
- 1 tomatillo, chopped
- 1 small jalapeno chili, seeded and minced (optional)
- 1 tablespoon chopped fresh cilantro|
- salt and sugar, to taste
Directions:
- In a bowl, combine and toss the cucumber, onion and lime juice. In a blender or food processor, blend the garlic, tomatillo, jalapeno chili and cilantro to a course puree, then stir into the cucumber mixture. Season with salt and sugar to taste.
- Serve chilled salsa with StarLite Cuisine Garlic Chicken Style Crispy Rolled Tacos.

Authentically spiced for a robust flavor, this delicious dip is also a good source of fiber and protein with no cholesterol. Makes a marvelous match with our Chorizo & Black Bean Style Taquitos.
Ingredients:
- 2 medium tomatoes, diced
- 2 cups cooked black beans, drained and coarsely mashed
- 1 small red onion, diced
- 1 large fresh jalapeno, seed and diced
- ½ cup cilantro, chopped
- 1 tablespoon chopped garlic
- Salt and black pepper, to taste
- 5 tablespoons fresh lime juice
- 1 tablespoon extra-virgin olive oil
Directions:
- Combine the first 6 ingredients in a mixing bowl. Season with salt and pepper. Add lime juice and olive oil. Mix well. Heat Taquitos using oven method and serve with black bean salsa dip.

This easy to make recipe is sure to warm your mornings and spice up your taste buds.
Ingredients:
- 1 package (8) StarLite Cuisine™ Taquitos (any flavor)
- 2 large potatoes, diced
- 1 onion, diced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 4 cups of ranchero sauce or salsa verde
- 2 cups shredded cheese (vegan or natural)
Directions:
Preheat the oven to 350 degrees F.
- Sauté onions until light golden brown.
- Add potatoes to onions; mix and sauté until potatoes are slightly crispy.
- Add 90% of diced green and red bell peppers to potatoes/onions and mix and heat through.
- Layer 1 cup of sauce in bottom of casserole dish. Lay taquitos into the sauce.
- Pour remaining 3 cups of sauce over taquitos.
- Layer topping mixture over taquitos
- Sprinkle taquitos and toppings with cheese
- Sprinkle remaining (10%) diced bell peppers on top
- Cover with aluminum foil and bake for 20-25 minutes
